3 bananas ( peeled and cut in half )
10 oz. semi sweet chocolate chips
2 to 3oz. chopped peanuts
6 popsicle sticks
Method: Chocolate Peanut Covered Bananas
Insert popsicle sticks into bananas and transfer to freezer for 15 to 20 minutes. Long enough to melt your chocolate. Melt chocolate in a double boiler stirring with a rubber spatula. Cook over about medium to medium low heat. You can also do this by placing a metal or oven safe glass bowl on top of a pan. Make sure the simmering water does not touch the bottom of the bowl.
After the chocolate has melted, pour it onto a piece of foil or wax paper. Add your peanuts to a plate and spread them out.
Retrieve your bananas from the freezer. Holding the popsicle stick, roll the banana in the chocolate. Cover all sides including the top and bottom. Then roll in the peanuts using the same method. Transfer your chocolate peanut covered bananas to a clean plate and repeat until all bananas are done. Place back into the freezer until frozen ( about 30-45 minutes ).
