This is a fabulous Christmas cookie recipe I’m sure you will enjoy. A great chocolate chip cookie recipe with the subtle flavor of cherries and then add a little crunch with some toasted walnuts… mmmm! These are very easy and quick to make. You’ll just love these, at holiday time or any time for that matter! Indulge yourself 🙂
1 1/8 cups sugar
1 1/4 cubes butter or margarine
1 1/4 teas. pure vanilla extract
1/4 teas. salt
1/2 teas. baking soda
1 1/2 cups semi sweet chocolate chips
1 0.13oz packet cherry drink mix (unsweetened)
2 oz. bag chopped walnuts
Method: Christmas Cookies
Melt the butter in a medium size bowl in your microwave (about 30-40 seconds) or melt it over low heat on your stove top in a small sauce pan and then pour it into a bowl. You just want it melted, not heated or it will cook the eggs.
Add the sugar, vanilla, and cherry drink mix to your butter and give it a good stir.
In another small bowl beat the two eggs and then stir them into your butter and sugar mix.
Toast your walnuts in a small sauce pan over a medium heat for about 2 minutes. Just long enough to slightly toast, this pulls out the flavor of the walnuts. After two minutes they should smell delicious and if you put your ear up to the pan you’ll hear them sizzling. Take them off the heat and let them cool slightly.
Add your butter/sugar mixture, chocolate chips and cooled walnuts to your flour and mix very well.
Your cookie mixture should be very thick which is what you want. It will be hard to stir but you can do it 🙂
You cookie dough is now ready to form your cookies so now is the time to heat your oven.
Heat your oven to 350 degrees and get two cookie sheets.
Grab yourself a tablespoon and scoop up a nice size amount of your cookie dough, a nice mounded over spoonful is what I do.
Now I just use my finger to slide the cookie dough off the spoon and place it on my cookie sheet. You could also use the back of another spoon if you like.
Place your “spoonfuls” about 1 inch apart on your cookie sheets to allow them to spread out while cooking.
Continue until all of the cookie dough has been used, it should fill two cookie sheets and you should get about 2 dozen big cookies.
Note: You could use a teaspoon instead for smaller cookies. In this case you’ll need at least 3 cookie sheets which will yield about 3 1/2 dozen cookies or so, your choice.
About the time you finish placing your cookies on the cookie sheets your oven should have preheated so place your cookies in the oven.
They will take about 20 to 25 minutes to bake, a little less for smaller cookies. You’ll know when they’re done when they are dry to the touch but still a little soft.
Remove them from your oven to cool for about 5 minutes and then transfer them to a piece of foil to cool the rest of the way.
Note: If you line your cookie sheets with parchment paper you can just let them cool on the cookie sheets.
Now it’s time to dig in! Transfer your Christmas cookies to a serving platter or whatever you like and pass them out!
