    You say that this is a Beef Tip Roast. Is this a sirloin tip roast or a round tip roast?

      Hi Josen,

      Great question! My butcher just calls it a beef tip roast but my experience tells me it’s a sirloin tip roast. Basically the cut of beef you want should have good marbling, like a good steak. Basically any sirloin roast will work as they stay tender while roasting. Bottom round roasts tend to get a little tough if not cooked right because of the low fat content. My “rule of thumb” is to make sure the cut of meat you get has little white ribbons of fat throughout the meat. These ribbons melt during roasting keeping the meat tender and juicy.

      Hi Ginnie,

      You can make this in a slow cooker and it will come out ok but my fear is it will be more like a pot roast and cooked to medium to medium well. Slow cooking tends to cook meat all the way through and it is difficult to get a nice medium rare. Pan searing for a few minutes and finishing in the oven gives the meat a different texture.
