This is a wonderful sweet and sour chicken stir fry dish loaded with great Asian Flavor. Made with tender chunks of marinated chicken and vegetables. Toss in some pineapple chunks, pour it over rice and you have a high quality dish any Asian restaurant would be proud to serve!
1/2 green pepper
1/2 red pepper
1/2 medium size onion
3-5 cloves fresh garlic (about 1 tbsp.)
1/3 cup pineapple juice
1/2 teas. salt
1/2 teas. pepper
4 tbsp. soy sauce
Note: You’ll need about a 15 to 20 oz. can of pineapple chunks for this recipe. The marinade uses 1/3 cup of the juice, the pineapple chunks come later.
Method: Sweet And Sour Chicken Stir Fry (Marinade)
Dice your green and red peppers as well as the onion into 1/2 inch dice.
Mince your fresh garlic. (If you’re using a jar of minced garlic you’ll need about a tbsp.
Add your chicken and vegetables to a large mixing bowl.
Using a measuring cup, pour in 1/3 cup of pineapple juice, 4 tbsp. soy sauce and the salt and pepper. You should have about 1/2 cup of marinade. Give it a good stir to mix and dissolve the salt.
Pour your marinade over the chicken and vegetable mix and stir well. Cover and marinate anywhere from 30 minutes to 2 hours, stirring occasionally. The marinade will drip to the bottom so it is important to stir every now and then to ensure an even coating. Just be sure to cover after stirring 🙂
Your sweet and sour chicken stir fry is ready for cooking at this point but let’s make the rice while your chicken is marinating.
Ingredients: Quick And Easy Rice
1 1/2 cups uncooked white rice
3 cups water
1/4 teas. salt
Method: Quick And Easy Rice
All you need to do to make this rice is to combine everything into a sauce pan, give it a stir, bring it to a boil, give it a stir and then lower the heat to your lowest setting. Cover and let it cook for 20 to 25 minutes, or until it’s “al dente” (soft to the tooth). That’s it!
Use a fork to “fluff it up”. It’s ready for your sweet and sour chicken stir fry.
Don’t worry it will stay hot long enough for you to make your stir fry. Just cover and set aside.
On to the stir fry!
Ingredients: Sweet And Sour Chicken Stir Fry
12 oz. sweet and sour sauce
1 1/2 cups pineapple chunks
chicken stir fry mix
1 1/2-2 tbsp. oil (for frying)
Method: Sweet And Sour Chicken Stir Fry
While your skillet is preheating get all of your ingredients together next to your pan. This will go pretty quick and it’s much easier if you have everything ready, including a thin spatula, bamboo if you have one. Ok? Let’s go!
Add the oil, peanut oil is good but anything will do.
Carefully pour your chicken mix into the skillet. Be careful, your pan is hot and it may spatter.
Spread the mixture out, stir and flip it around in the skillet to ensure even cooking. Keep stirring and flipping for about 5 minutes.
At 5 minutes, add the sweet and sour sauce. Keep stirring and flipping to coat everything evenly. Continue stirring and flipping for 5 more minutes.
Now you’ve been “stir frying” for 10 minutes. Add the pineapple and continue to flip and stir for another 5-7 minutes. That’s it, it’s ready!
Now just add some of your cooked rice to a plate and pour some of your sweet and sour chicken stir fry over the top and dig in!
Note: When cooking your stir fry it is important to have only 1 layer of the chicken mix in the bottom of your skillet to ensure the chicken gets thoroughly cooked so be sure to use an extra wide skillet. If you are using a regular 12in. skillet you may have to make this in 2 batches.
This recipe will make about 4 plates or so.
